So what's the mot popular rig to use on the pier? I have to admit I don't have a lot of experience with rigs (other than the Lindy Rig, for walleyes). I know some are used for catching bait fish and others for actual keeper fish.

In no particular order of popularity, some common rigs are:
- Carolina rig
- Dropshot
- Fish finder rig
- An unweighted leader (mono, flouro & steel)
- Sabiki rig
I'm probably forgetting some also.
What about the Alabama rig? Are some more suited to saltwater vs freshwater?
red ribbon rig for bait
Straw rig?
Pier#r....What's a straw rig?
Man, I cannot wait to start slinging bubble rigs again. I set up my factory table yesterday and started building and bagging my bubble rigs for spring while I watched football. A great NYD... but sure made me want warm water and top water hitters.
sigh... just gotta wait. But I'm all set for spring. Built and bagged three dozen. That should give me a week or two for battle casualties when they start chewing down the pier.
I don't dare make up rigs like that ahead of time because something---elves, gremlins, dwarves or hobgoblins---gets in my tackle box and tangles them all to h#ll. I do still have most of the king leaders I made up last year, which is a sad reflection of the quality of king fishing last season. I guess I'll make up some sheepshead leaders and wrap them around a piece of foam.
Oh, heck, I almost forgot to mention speck rigs to add to the list. They sometimes murder the Spanish when nothing else will.
Usually far from the "best", but definitely "popular" is the High-Low Rig or 'Gulf Rig'

Double drop pompano rig tied in 20-40lb mono is one of the most useful tools in the surf/pier fishing arsenal. Avoid the ones made of nylon coated wire, the crimps on them are inconsistent and wire isn't needed for pomps, whiting, drum etc.
