I have fished with bubble rigs before, but am not sure if my setup was correct. Can someone post a picture of their setup?

Here's a link from anothr forum.
Bubble Rig (Straw Rig)
Also sewrching "bubble rig" on here turns up like 9800000 threads.
I've seen bubble rigs rigged-up many different ways. Make sure the narrow end of the bubble's stem is toward the rod, and the wide end is toward the straw. I use 40 lbs mono for my leader, 28 inches with #4 treble hook.
Pretty sure you mean wide end towards the straw. That way you push it in better as you jig it or cast, other way you are pushing the stem out.
That's the way I always rig mine with the big part of stem toward straw. Also fluorocarbon leader is not needed on a bubble your working it so fast fish don't have time to see regular mono and it's cheaper.
Are the Spanish doing anything on a bubble rig yet ?
Keep it simple, 50# mono with a big loop & bead at the top, small treble & straw at the bottom.
