Fishing inshore...bringing boat

We are bring our boat and planning to fish for Specs and Redfish, maybe even flounder. We have had success doing this in Santa Rosa Sound, in past years, but this will be our first year in Orange Beach. We will be by Island Dunes Condo complex, and plan on fishing that area. Any and all tips, and wht baits would be appreciated. We have used DOA shrimp before with good success, and wonder if those will work here, and if so what color? Thanks for any and all information.
