The best commonly caught fish for the freezer would probably be whiting, sheepshead, flounder and redfish. Cobia do great, but not many are caught. I've had fine luck freezing Spanish mackerel in a vacuum sealer and there's nothing wrong with frozen King on the smoker. Don't know about pompano because it doesn't stay around long enough. Use the "search" feature for flounder fishing techniques.
Pretty much everything freezes well except trout of any kind.
Spanish freezes OK, but tastes best fresh, and if frozen should be eaten within a couple of weeks. Most other fish can stay frozen 3-6 months.
I freeze all kinds of fish with a vacuum packer and have yet to find any that came out bad. Even white trout, which everyone swears is un-freezable, seemed fine to me after a couple of months in vacuum seal. After last years Spanish mac invasion, I had Spanish macs in the freezer for about 6 months before we ran out, still tasted fine.
Get a vacuum packer, don't have to buy the most expensive, but don't get the cheapest either. I have a Rival Seal-a-Meal that is 8 years old and still going strong. By far the best hunting & fishing investment I ever made.
