Depends on who you ask, I use 27lb single strand but its different strokes for different folks.

I use different sizes for different conditions:
27# or 32# (single strand) as a 'standard with 15# line spinning tackle
38# or 44# (single strand) when bigger kings are dominating using 20# line
12#-18# single or Sevenstrand for spanish. using 6# - 10# line setups
The surest way I know to break off a mackerel leader (king or big spanish) is to use too heavy a line with too light weight of wire.
They will either cut that over-stressed wire on the initial run, or kink it and break off later in the fight :(

As #r stated, different sizes for different conditions. However if I was limited to one single choice, I would have to go with 30# test AFW brand 7 strand.

Wire, un-coated wire in single or seven strand wire, the most popular tests appear to be 20#, 27#, 30# & 60#.
40# is not used due to it's diameter apparently being perfectly sized for Mr. King's dentition to cut with ease.
I'm using the 30# seven strand.
Leader length, a foot (minimum) and longer.
I'm tying mine at approx 1.5'-2'.
Most single/seven strand I've seen locally is what is colored Camo, which is a bronze or brown that disappears in the water.
I would use that or perhaps black/green, I would not use any silver/gold/bright metal for any terminal tackle as it being flashy & shiny draws strikes and that means missed strikes, cutoffs and/or spooked fish.

Why not single? Single is used just as much as seven, it is personal preference.
It apparently doesn't really matter, single or seven, half a dozen one way, six the next.
I like #30 sevenstrand wire about 2' long, a thick circle hook 4 to 6 Ot and a treble stinger on about 6" long. That Stinger gets em.
Single strand works fine too. I personally think that 7 strand is somewhat better.
Here are four reasons I suggest 7 over single:
1. Since it's more flexible, bait swims more naturally.
2. Single strand is more prone to having a kink set in it. If the kink is severe enough, it's more likely to fail.
3. Making leaders with 7 is much easier to do correctly. Unless you're proficient at making a haywire twists it's easy to do wrong.
4. It is at least twice as quick to tie a 7 strand leader.
