Approximately how deep is the water at the deepest point between the jetty rocks?
Approx 9'-12' after the USACoE got done dredging it in in early '15.
A helluva lot of sand moves through there and it varies greatly with each strong tide and storm.
There are places along the wall that have been consistently much deeper (15'+) and there is a hole on the East side that is almost always scoured out by the currents and a good 10'+.

What kind of fish are around the jetty? And what kind of big fish?

Redfish, sheepshead, grey snapper, specs, blues, Spanish.
... flounder, drum, ladyfish and blue runner.
LOTS of pinfish and pigfish in the late summer and early fall.
Big fish: occasionally jack crevelle, shark, even ling and king mackerel!
last year i was in the week of april 30. i caught a few flounder and some pompano off the beach side of the jetty. i walked out and fished several mornings but wasnt ever able to get a big fish. i was able to hook and large fish on about a 6" pinfish. after hooking and battling the fish for 10 minutes i lost the fish, the pinfish was still alive and showed 0 sign of being hit, no toothmarks, scales marked, or anything so not sure what it was. this year im coming the 2nd week of may with intentions of a big hookup from the jetty. any advice you guys have to help me accomplish this? and doesnt have to be a gamefish. just want something big pulling on the other end thanks
Where is this so called Jetty? i'm not familiar with the area or landmarks other than the piers along the gulf.

Live shrimp.
If you are venturing far out onto the jetties, the less you take, the better your trip out and back will be. Live shrimp/mud minnows/finger mullet/killifish are always a good bet, but it can be inconvenient to tote a bucket of live bait out and back if you plan on fishing towards the end. I always carry an assortment of jigheads and gulp/plastic bodies, a few hair or pomp jigs, and a few spoons. I also take a small soft-sided cooler with a couple of waters and some fresh peeled shrimp for my Carolina rig. You can always carry a smaller bait rod with you and catch grunts and pinfish from the jetties to use as fresh cut or live bait. Best bait would depend on your target, but the above-mentioned will catch almost anything you would run into out there.

Plenty of sharks there. You may luck up and get a few Spanish carcasses from someone at the pier cleaning station and take them out to the jetty in a cooler.
Are you allowed to beach sharks there, i thought that was illegal in the gulfshores,orange beach area?
East side is in the State Park, so I think technically not legal to land sharks.
It is not illegal to shark or land sharks anywhere but the Gulf State Park. It is illegal to chum/ bloodbait from shore, or pose any sort of a risk/danger to anyone on the beach or in the water in AL while doing any sort of surf fishing. You're fine at the Pass, just be discreet.

The real problem is that the Gulf State Park has made it a No-No to do any shark fishing period.
Ever try to reason with, or get a bureaucracy to change it's rules/regs? You'll have an easier time doing dental work on a free swimming 10' Tiger shark.

They wrote regulations that allow them to shut down any shore based fisherman at any time.
If you're obviously shark fishing, you better be far, far away from anyone in the water.

Yeah those regs are a headache, where would you suggest to go for some landbased shark fishing chile? No yak just casting out
Casting for sharks is indistinguishable from any other surf fishing, you just happen to hook into a shark.
There is nothing they can do to you unless you're an idiot actually posing a hazard to other beach goers.
I hook into more Bull Reds when fishing for sharks on my casting gear than I do sharks.

Just about any AL public beach access once the sun starts to go down, the shorter the walk to the shore line the better for hauling gear.
If you've a beach house in AL there is usually limited public access in beach residential areas, but plenty of resident access, shark away as long as no one is swimming next to you.
I do however prefer to go to FL if possible, way more public access and the laws protect the fishermen.
Can you land one in the morning before there are swimmers in the water if you staying at one of the condos in Orange Beach?
Of course you can, you're not posing a hazard to anyone if they're not there.
I will be down this coming Thursday. How is the shark fishing right now. Is there water temperature good for it? And any advice on catching one from the beach early in the morning or late at night??

Last year I hiked to the very end with a 5 gallon bucket of live shrimp and 10lbs of tackle and took 5 rods. Going to huff it out there again this weekend to see if I can hook up to something with some pull.
Better you than me... I'm getting too fat and lazy in my middle age to walk out there.
But putting the yak in and going out is still do'able.
Willie Ducharme was in his late 80s and would hike out on the rocks every day.

I don't know about sharks there, but one time I caught a small grouper on the side the gulf restaurant is on. There are also schools of bluefish that come through and they are a blast to catch on light gear, one thing to be aware of though are the pesky pinfish.
