Is a Uni knot good to use for tying wire (single or 7 strand) to treble hooks or is better to use a figure 8 (7 strand) or haywire twist (single strand) for wire. I've used Uni for mono, fluoro and braid but not wire. Any thoughts on that?

I take that as meaning Uni only for mono, fluoro, braid.
There is a uni knot variant for attaching thin mono to a vastly thicker shock leader. Basically an overhand knot in the shock leader around the main line and a uni of main line around leader. That seems like a lot of work to adapt to wire when simpler options are known and reliable.
Snell the 7strand to the treble is another option... ( I do it this way)
Or use the sleeves I use those on the swivel
That works. There as many opinions about knots as anything in fishing.
