White trout is an excellent bait for white trout.
Rigs around lower Mobile Bay are the best go-to spots.
I dont know of anywhere to catch them consistently from shore during summer. During Fall, the bank over the Tensaw River on the causeway can be good. I've caught them from the pier in cooler months.
They say the Fairhope pier at night has lots of white trout but i havent tried it

We used to catch them pretty good from the GSPPier at times, but not the last few years (hmmm, whadup wit dat?)
Anyway Big Mouth (south end of Co Rd 1) day or night, and Cedar Pt Pier at night.
Fairhope should be getting good soon (at night under the lights),
and maybe Mayday pier in another month.
Also DI Golf Course can hold decent numbers on cut bait or Gulp Shrimp in the summer, as well as accessible places in Terry Cove, Cotton Bayou and lower Mobile Bay (like Ft Morgan).
Most dock lights should be full of them at night IF you can gain access.

I think in the Fall of 2011, late one evening I got into a mess of them on the backside of the octi on the pier until I ran out of dead shrimp. Also caught a Lookdown and a big *ss Gafftop. Guess it was lucky timing. I should try it again. That was fun! :)
I live by May Day pier and fishing has not fired up yet. Still nothing but croakers. I hope it comes soon though, much much closer than GSSP!
Fairhope pier has been having success at night lately with reds and speckled trout. Witnessed both of these being caught recently.
We caught a mess of them one day last year in mid-August in the surf near Mobile street. That was the only time in 10 years we ever caught any there, and it was only that one day. Rest of the week was all whiting, blues, and cats.
I stayed all night and fished everything in my arsenal under the lights at the Fairhope pier, I caught 1 lousy undersize speck.............
Ya gotta wait till it gets a little cooler. When you see an Armada of boats off the stern or abeam of the Battleship Alabama, just take 5 shrimp, catch one white trout, use it for bait, and you will catch all you can eat. Cotton Bayou is another hot spot as mentioned and where there are lights on the water.
As #er said, big mouth is probably loaded with them. I know the reefs around the area are. That goes for crabs too, the eating kind that is.
