Happy 18th Birthday Dinner

Where does the time go?
How many times do we ask ourselves that, way too often and more and more often the older we get.
And on the subject of getting older, Saturday November 11th we celebrated our youngest son's 18th birthday!

Tradition in our family says you choose the menu for your birthday meal.
He chose Ribeye steaks, Seared Scallops and Grilled Pineapple.
I can do that.
Ribeye Steaks
Dry brined overnight, really keeps them juicy and tenderizes too.
Cooked to 135°
Served with Chimichurri

I understand the years vanishing. My youngest grandchild turned 16 this year. Enjoy them while we can.

Wow--this is the kid whom I first met at the point at Ft. Morgan when he was taking a break from chasing blue herons. Tempus fugit.

Treasure every day you have with him. My grandkids are no longer kids and off making their way in the world, one in Mew York City and two in Denver. They are all planning to come home for Christmas. Their parents are deceased and we raised them from age seven. We treasure every moment we get with them.
