Pompano A la Ray for Dinner Tonight
I think I hurt myself tonight. 1 filet off a large Pompano (about 20 inches) accompanied by a baked potato and a green salad along with three glasses of red wine and a bowl of peach cobbler. Recipe follows;
Preheat oven to 400 degrees.
Lightly cover a large pyrex dish with olive oil. (I prefer extra virgin)
Slice a half purple onion into slices 1/8 inch thick and place in dish.
Lay fish filet on top of the sliced onion with the skin side down(skin has been removed).
Slice several cloves of garlic very thin and scatter over filet.
Slice several mini sweet peppers into rings and deseed them and scatter over filet.
Squeeze a quarter of lime over filet.
Cover liberally with zesty Italian salad dressing.
Sprinkle Cajun seasoning and dill weed over the finished dish.
Cook for 12 minutes and ENJOY!

My wife just got me a "SMART-PHONE". Come to find out, it's not the intelligence of the apparatus that's the problem! I think that you just have to spend time with it and with those of us in (((the fourth quarter))) don't want to run out the clock peering into a mechanical device. Now, I don't have any excuse for not posting fish pics!

I was on call 24/7 for over 20 years for my job and viewed cell phones as one of the worst inventions ever, so even though I am now retired I only take one with me when my wife insists. (it is a dumb flip phone).
