Pompano in Parchment Paper
Put together a new recipe for dinner last night. Turned out well.
Used boneless skinless Pompano Filets.
1/3 of an onion sliced into thin slivers.
1/3 of a bell pepper sliced into thin slivers
4 cloves garlic sliced thinly
1 large table spoon of stuffed olives sliced thinly
2 center sections of a lime sliced thinly
Placed the Pompano Filets and the sliced vegetables in a bowl
and coated with extra virgin olive oil and seasoned with
Cajun seasoning and dill weed. Stirred well to thoroughly coat.
Cut a large sheet of Parchment paper off the roll.
Placed the slices of lime on half of the paper then added
the fish filets on top of the lime then added the mixed
vegetables. Used a pat of softened butter to rub around
the outside edges of the paper to help it stick together.
Folded the empty half of the paper over the pile and
rubbed against the buttered edges to help it seal.
You then crimp all the edges of the paper together to
create an airtight pouch. Object is to steam the contents.
Placed in a preheated to 375 degrees oven for 13 minutes.
Served by placing the packet on a plate and cutting the
packet open and trimming the excess paper out of the way.
I had heard of something similar and believe the choice
of vegetables for the recipe could vary to suit your preferences.
I was very pleased with the results and when I finished there
was nothing on the plate but the parchment paper.
