    Pan-fried Bluefish

The grandson was wanting to eat some of the bluefish and spanish mackerel we caught yesterday.
So I introduced him to pan-frying them in mayonnaise based seasoning.

Filletted the the fish and trimmed out the bones and most of the 'red meat'.
Slathered the fillets with a thin coating of mayo with greek Seasonings mixed into it...

Pan seared each side for 5 minutes...

and served up with grandma's mashed potatoes and two green sides ;-)

Included some spanish mackerel fillets as well and we both ate TWO whole fish!
Thank You Lord, for putting it all there!!

Great pictures #'r it's funny that on the east coast folks will fight you for a bluefish but the ones here "aren't any good". Of course it was like that for a lot of fish like amberjack, trigger fish and bonita to name a few. Anyway, try frying bluefish fillets rolled in crushed saltine crackers-might change one's idea of what isn't any good.

The bluefish are starting to get some size to them here, almost always willing to bite, great fighters, good to eat. Win-win-win,

Made an interesting discovery cleaning fish this morning.
Bluefish have rather large 'cheek meat'.
    This from an 18"r...
