Scale, gut, remove gills, leave the head one.
Pre-heat over to 425.
Make some slits in the upper part of the fish if its relatively large.
Dress with olive oil, salt & pepper.
Bake until done.
Fresh caught fish are tasty and need little seasoning, just don't overcook. It's sinful to overcook seafood.

Can do this with any fish that'll fit on the grill, on the grate, in a basket or in foil.
Can also be done baked or broiled the oven.
Whole fish is on my humble opinion tastier than fillets and you can get all the yummy bits of meat on the fish, e.g. head/cheeks/throat.
Amazing how much good meat is on a fish head, especially upper slot redfish & sheepshead.
I can bake a 5# sheepshead whole and we will pick it clean, looks like a dinosaur skeleton at the museum when we're don't with it!
