When I've caught a Jack at the pier in the past I just break it off when I get it back to the pilings. I see guys with pics of them gaffed and such. Just wondering what most folks do with them after the pic? I know very few people eat them.

Recently, there has been a trend toward eating them. Haven't tried one myself, but I've heard they taste pretty good on the grill with appropriate handling and seasoning. The Aisian folks on the pier certainly don't let them go to waste!
I made fish curry with the one I kept last summer.
Next time I will try them grilled.
They have a texture like pork but taste like a fish.
I will keep any I catch from now on.

Fish salad, comparable to Tuna salad. Grilled also works.

And yeah, contrary to popular opinion, supposed to be good eating.
I have always released them after enjoying the great fight they give. I do the same with Kings and Spanish unless somebody wants them. I don't like their flavor and don't believe in doctoring fish and game up with all kinds of seasonings to make it edible. Kind of like Geese, I've shot many but never found a way to cook them to my taste. My Golden Retriever won't eat them either so I don't hunt them anymore.
