Bacon + Venison =
Bacon + Venison = Delectable!
Venison backstrap medallions, salt & cajun spice, wrap in bacon.
Very hot skillet of olive oil, cook till bacon is crisp.
All my venison came out medium or just a tad under medium.
Some fresh Jalapenos from the garden cooked in the grease for some added zing.
Not exactly heart healthy, but so dagblasted good, I can indulge once in awhile.

That looks great, and you will be glad to know that even the federal government has finally admitted there is no link between dietary cholesterol and heart disease. Forget the last 50 years of American Heart Association guidelines; they were not based on good science. Venison is better than beef for the heart. A little bacon never hurt anyone and I don' know anyone who don't like it.
