Vidalia onion season special
Liberally oil pyrex dish with olive oil.
Slice onion into vertical slivers and cover the bottom of the dish with the onions.
Place boneless skinless filets with skin side down over the onions.
Squeeze lemon or lime juice over filets.
Pour Italian salad dressing over the filets.
Sprinkle Cajun seasoning and dill weed over the top.
Bake at 400 degrees for 15 to 20 minutes until fish flakes.
Serve over the bed of cooked onions or over a bed of cooked pasta and
spoon the cooked onions across the top.
Accompany with a whole wheat roll and a glass of red wine.
I used bass filets last night but this will work with any fish.
