Frozen food saver vacuum packed Blackened Sheepshead
I thought I would welcome Old Man Winter today with some blackened sheepshead and cheese grits for dinner. Since he was nice enough to let the temp get up to 68 here in NOALA on the first day of winter, we celebrated with some fish that has been in the freezer since Spring Break week (9 months). I was a bit skeptical as to how it would taste but it turned out great-moist, tender, flaky and flavorful. No credit to my skills as a chef but I will credit the Food Saver I got for Christmas a couple of years ago. I have never had fish last this long in regular freezer bags. I was fortunate enough to be on the pier during a chew down armed with ghost shrimp on the day they wanted them and I bought 8 dozen live shrimp right before the bait shops all sold out. The next 2 days they wouldn't eat anything but live shrimp. I cleaned, vacuumed, and froze them the night they were caught except the ones we ate down there. I still have a few packs left but I hope to replenish in about 3 months. Tight lines.
