Grilled Bonita and Bonita ceviche
I was gifted a large bonita yesterday-bled it quickly and filleted it and packed the fillets on ice. Cut four nice steaks from one of the fillets, rubbed olive oil, pepper and a little salt then grilled. I made ceviche with the rest, cutting into small chunks. Lots of recipes but I mix lime juice, onion, tomato, cilantro, diced jalapeno, salt, pepper, sliced green olives and olive oil.
I grew up thinking you couldn't eat bonita, I didn't know what I didn't know...
