Baked Red Fish for dinner - Quick and Easy
Last nights dinner compliments of my Oct/Nov trip to Four Seasons in Orange Beach. Put some
Olive oil in a pyrex dish. Thaw the filets and pat them dry with a paper towel before placing them with what used to be the skin side down. Squeeze a little lime juice over the filets. slice fresh garlic thinly and place over the filets. Pour a liberal amount of zesty Italian salad dressing over the filets/garlic. Sprinkle liberally with Cajun seasoning and dill weed. Put in a preheated to 425 degrees oven for 10 to 12 minutes depending upon filet thickness. Accompany with a green salad some boiled new potatoes covered in chopped onions and a glass of white zinfandel wine and ENJOY.
