Followed Jims lead today and decided to keep a few Sailcat and Hards . Just enjoyed a nice plate of filets . Firm ,white meat with a hint of sweetness and absolutely tasty !!!

Jim also talked me into trying them. Not crazy about hardhead, but the Sailcats were great and easy to clean. There are other fish that I prefer but I'll usually keep a few larger ones if that's all that is around.

I actually like to eat hardhead cats.hate to get stuck by them though.my recipe for them is.
first off I cook most all of my fish whole minus scales and guts ofc.
lay it out on aluminum foil brush with olive oil sprinkle with fiesta lime mrs dash,flip and repeat.preheat oven to 350.
throw in the oven for 15-20 minutes pull it out.
peel skin back with a fork,sprinkle a bit of lemon juice on it and enjoy.
