Simple Baked Striper
2 or three striper or hybrid fillets about 1" thick at the thickest point (or any similar, flaky, white fleshed fish.
3 or 4 potatoes of choice (I like red potatoes for this one)
1 large onion
Butter to taste
Olive oil
1 lemon,
1/2-3/4 cup of Riesling or Sauvignon blanc
Garlic powder or sliced/diced cloves
Paprika
Salt
Pepper
Wash and slice potatoes 1/4 inch thick or less and lay flat in the bottom of a glass baking pan. Slice onion and lay over the potatoes. Drizzle olive oil over onions and potatoes, add the wine, a few pats of butter and squeeze half the lemon over them. Season with garlic, paprika,salt and pepper. Place in 375 degree oven for 15-20 minutes.
Remove from oven, place fillets over onions and potatoes, season with more paprika, salt, pepper and place a pat of butter (or two) atop each fillet. I also like to splash each fillet with a little more wine but that's optional. Return to the oven until the fish is cooked.
Once the fish is cooked, remove from the oven, rearrange so that the fish sits down in the liquid on the bottom of the pan. If need be remove some potatoes and onions or pile them on the fish. With the the fish in the liquid, return the pan to the oven for another 5-10 minutes.
Remove from the oven, squeeze the remaining lemon half over the fish, potatoes and onions. Enjoy.

Sounds like how my Mother did it but she would use Italian seasoning and garlic , We loved it as kids
