We're having one of our nephews and his newlywed wife over tonight, going to entertain them with a nice BBQ dinner.

1.5C leftover Pot Roast, shredded
Onion, small, halved and sliced
1/2C Bell Pepper, chopped
1t Garlic, minced
2-3 eggs
salt, red pepper, cumin

Put a little bacon grease in a skillet, place over high heat till just starting to shimmer
Add onion, peppers, garlic and roast, add seasonings to taste
Cook till ya get some crispy edges on the beef and some color on the onions/peppers

Turn to medium heat and add eggs, whole or scrambled, let eggs cook into the meat
Serve with warm tortillas

Made this tonite with leftover pork from the crockpot. I was excellent. Next time I'll add more spices during the frying stage.
