Our next door neighbor went snapper fishing on a charter and gave us some fillets from his catch. Since I don't like to eat fish, I don't cook it much, but want to cook for hubby. Need a good recipe. Please no grilling involved. The new drop in grill hasn't been dropped in yet.

Look up "Legal Seafood" scallops recipe, but substitute snapper for the scallops. Easy and good if you like rich taste. Basically you season with salt pepper and thyme, then soak in buttermilk, pour buttermilk off and top with crushed Ritz crackers over which you pour melted butter, then bake at 400 for 15-20 minutes (depending on thickness). Garnish with lemon.
Fast, easy delicious, but rich with butter.
I enjoy most thick filets blackened. I won't pretend to have a recipe, as I just eye ball it...but easy to find one online.
Basically a dry rub of salt, pepper, paprika, cayenne, oregano, garlic, onion powder. Heat skillet to medium high, brown butter, toss on fish for 2-4min per side. Usually at the end I pour the remaining butter from the skillet onto the fish.
