The way I do it is let it sink all the way to the bottom and slowly reel it in, if you feel that you're hung set the hook, but some times you really is hung lol.

Do you guys rip their big claw off before you toss them in?

No. Unless we're low on bait, we rip the claw off and use that as bait too.
