have simmered the filets in chicken broth,let them cool,shred them with a fork and made fish cakes by mixing the meat with italian bread crumbs, crushed saltine crackers ,and egg to bind it together.A little old bay seasoning and fry in a little olive oil .Remove the dark strip of the filet before cooking if you want a milder taste.always goes fast at our house.
