I keep it simple and it's always good, especially on a green egg...
Filet it and cut into loins. Cut about 2" wide pieces from width wise direction. Wrap pieces with bacon then spray with lemon juice and black pepper. Put on grill and cook till bacon is done...mmmm good!!

has anyone tried like a salmon patty out of the king just thinking it might be a good replacement for the salmon

Hmmm. I've always had good luck doing backstrap and duck breast as follows:
cut a pocket and fill it with cream cheese and jalapenos; wrap in bacon and grill until the bacon is done. Wonder how that would work with king filets.....Fish. Just fish.

I made a batch tonight
Haven't posted in a long ,long time. We caught a perfect 27 inch king last weekend and I have made Ms Pats dip for a party tomorrow. I'll try to start posting more as I am just about done on the new house construction.
